Spinach-Rice Casserole - cooking recipe

3/4 c. brown rice
2 c. vegetable broth
1/2 c. grated Cheddar cheese
2 Tbsp. minced fresh parsley
1 lb. fresh spinach, washed and chopped
1/4 tsp. garlic powder
1/4 tsp. black pepper
2 eggs, beaten
4 Tbsp. finely grated fresh Parmesan cheese
2 Tbsp. melted butter
1/2 c. fresh whole wheat bread crumbs
Preparation

Cook for 40 minutes the brown rice and vegetable broth. Prepare the Cheddar cheese, parsley and fresh spinach while rice is cooking.
After rice has cooked 30 minutes, preheat oven to 350\u00b0. Mix cooked rice with the Cheddar cheese mixture adding garlic powder, black pepper and eggs.
Spoon mixture into greased casserole dish.
Top with mixture of Parmesan cheese, melted butter and bread crumbs.
Bake at 350\u00b0 for 35 minutes.
