Parslied Potatoes - cooking recipe

Ingredients
    1 1/2 lb. red potatoes, scrubbed
    1 Tbsp. oil
    1 onion, chopped
    1 clove garlic or 1/4 tsp. garlic powder
    1 c. chicken broth or stock
    1 c. fresh chopped parsley, divided
    1/2 tsp. pepper
Preparation
    Peel a strip of skin off of potatoes in the middle.
    Place potatoes in cold water.
    Heat large skillet over medium-high heat. Add oil.
    Saut onion and garlic for approximately 5 minutes. Add broth and 3/4 cup parsley; bring to a boil.
    Place potatoes (one layer) in skillet.
    Return to boil.
    Reduce heat.
    Simmer, covered, for 10 minutes or until potatoes are tender. Remove potatoes with slotted spoon to a serving bowl.
    Add pepper to skillet mixture; stir.
    Pour over potatoes.
    Sprinkle with remaining parsley.
