Mozzarella Meat Loaf - cooking recipe

Ingredients
    2 lb. ground turkey
    2 Egg Beaters
    1 c. saltine cracker crumbs
    1/2 c. grated Parmesan cheese (optional)
    1/2 c. chopped onion
    1 to 1 1/2 tsp. salt
    1 tsp. dried oregano
    1 (8 oz.) can pizza sauce
    3 slices Mozzarella cheese, halved
    2 Tbsp. oleo
Preparation
    Mix turkey, Egg Beaters, crumbs, milk (1 cup skimmed), Parmesan cheese, onion, salt and oregano.
    Shape into loaf and place in a greased 9 x 5 x 3-inch loaf pan.
    Bake at 350\u00b0 for 1 to 1 1/4 hours or until no pink remains; drain.
    Spoon pizza sauce over loaf and top with Mozzarella cheese slices.
    Return to oven for 10 minutes or until cheese is melted.
    Yield: 8 to 10 servings.
