Nipponese Eggplant - cooking recipe

Ingredients
    2 Tbsp. butter or margarine
    3 medium onions, thinly sliced
    1 small eggplant
    1/4 c. soy sauce (approximately)
    1/4 c. water (approximately)
    2 to 3 Tbsp. light brown sugar
Preparation
    Peel eggplant and cut into 1/2-inch to 3/4-inch cubes. Meanwhile, in a skillet, fry onions in butter.
    Add eggplant, soy sauce, water and brown sugar to onions.
    Cover and simmer for 20 minutes.
    Serves 3 to 4.
