"You Won'T Believe This" Cornbread Stuffing - cooking recipe

Ingredients
    2 loaves coarse grain whole wheat bread (2 or 3 days old), diced or cubed
    oil
    2 Tbsp. poultry seasoning
    4 cans chicken broth
    1 c. corn meal
    1 medium onion, diced
    2 c. diced celery
    1 stick butter
    2 c. water
    1 tsp. pepper
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Put chicken broth in heavy saucepan.
    Bring to simmer.
    Pour corn meal into chicken broth slowly, stirring constantly until thick, about 10 minutes.
    Cover and set aside.
