Sicilian Meat Roll - cooking recipe

Ingredients
    2 beaten eggs
    3/4 c. soft breadcrumbs
    1/2 c. tomato juice
    2 Tbsp. snipped parsley
    1/2 tsp. dried oregano, crushed
    1/4 tsp. salt
    1/4 tsp. pepper
    1 small clove garlic, minced
    2 lb. lean ground beef
    8 thin slices boiled ham
    6 oz. (1 1/2 c.) shredded Mozzarella
    3 slices Mozzarella, halved diagonally
Preparation
    Combine eggs, breadcrumbs, tomato juice, parsley, oregano, salt, pepper and garlic.
    Stir in ground beef, mixing well with hands.
    On waxed paper, pat meat to a 12 x 10-inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edge.
    Sprinkle shredded cheese over ham.
    Starting from short end, carefully roll up meat, using paper to lift; seal edges and ends.
    Bake in 350\u00b0 oven for 1 1/4 hours.
    Place cheese wedges over top of roll.
    Return to oven for 5 minutes, or until cheese melts.
    Serve with watermelon pickle or sweet relish.
    Serves 6 to 8.
