Italian Eggplant Casserole - cooking recipe
Ingredients

1 medium unpeeled eggplant, diced
3 medium onions, chopped
2 Tbsp. butter
2 beaten egg yolks
1/2 c. grated Parmesan cheese
1 tsp. salt
1 c. cracker crumbs
Preparation

Cook eggplant and onions in water to cover 20 minutes.
Drain and add remaining ingredients.
Place in greased casserole and bake in moderate oven at 350\u00b0 for 30 minutes or until brown. Serves 6.
