Cuban Black Bean Pie(Yields 24 Servings) - cooking recipe

12 eggs
10 oz. honey
1/2 c. cilantro, chopped
1/3 c. ground cumin
1/2 c. lime juice
2 Tbsp. lime zest
1 tsp. cayenne pepper
1 tsp. salt
3 lb. canned black beans, drained
1 1/4 lb. white rice, cooked
1 1/4 lb. Cheddar cheese, shredded
4 prepared 9-inch pie shells
1 1/2 c. sour cream
1/2 c. salsa
1/2 c. red onions, chopped
Preparation

Combine eggs, honey, cilantro, cumin, lime juice, lime zest, cayenne pepper and salt; reserve.
Combine beans, rice and cheese; spread in pie shells.
Top with reserved egg mixture.
