Zucchini Muffins - cooking recipe
Ingredients

3 eggs
1 c. oil
2 c. sugar
2 c. shredded zucchini
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1 c. chopped nuts (optional)
Preparation

Beat eggs until light and foamy.
Add oil, sugar, vanilla and zucchini.
Into a separate bowl, sift the dry ingredients.
Add dry ingredients to zucchini mixture, along with nuts.
Pour into greased muffin tins or use muffin papers.
Bake at 350\u00b0 for 20 to 30 minutes.
Yield:
2 dozen.
