Microwave Diabetic Apple Cake - cooking recipe

Ingredients
    1 stick margarine (unsalted)
    1/2 c. canola oil
    1 c. sugar (20 pkg. Equal)
    2 eggs
    1 1/2 c. flour
    1 tsp. baking powder
    1/2 tsp. vanilla
    1/2 tsp. cinnamon
    1 1/2 c. chopped apples
    1/2 c. chopped nuts (optional)
Preparation
    Melt margarine in an 8-inch round microwave dish (glass preferable).
    Set
    aside.
    Mix
    oil,
    Equal and eggs together. In another bowl,
    mix\tremainder of the ingredients and add to egg mixture.
    Pour
    into
    dish\tand stir or fold in the margarine. Microwave on
    High\t10
    to\t12 minutes, turning every 3 minutes.
