Pumpkin Roll - cooking recipe

Ingredients
    3 eggs, well beaten
    1 c. sugar
    2/3 c. pumpkin
    1 Tbsp. lemon juice
    3/4 c. flour
    1 tsp. baking powder
    2 tsp. cinnamon
    1/2 tsp. ginger
    1/2 tsp. nutmeg
    1/2 tsp. salt
Preparation
    Use jelly roll pan.
    Grease and flour pan.
    Whip eggs until thick and foamy.
    Add sugar gradually to eggs.
    Fold in pumpkin and lemon juice. Sift together all dry ingredients and fold into egg mixture, beating just until batter is smooth (can use electric mixer, low speed).
    Pour into pan.
    Bake 15 minutes at 375\u00b0 or until cake springs back when touched lightly.
    Immediately loosen cake from edges of pan; invert on towel sprinkled with confectioners sugar.
    While hot, roll cake and towel from narrow end.
    Cool completely on wire rack.
