Sweet Cucumber Relish - cooking recipe
Ingredients

1 peck cukes (large green)
8 medium onions
6 red peppers (sweet)
2 red hot peppers
1 qt. cider vinegar
4 lb. sugar (2 white, 2 brown)
2 Tbsp. celery seed
1 Tbsp. mustard seed
3 handfuls pickling salt
Preparation

Remove pulp from cukes (do not peel unless ripe).
Grind with meat grinder (fine) the cukes, onions and peppers.
Put in layers and sprinkle salt between each layer.
Let stand overnight.
Drain well in morning.
Add remaining ingredients.
Bring to a full rolling boil and boil 10 minutes.
Pack in hot jars.
