Ingredients

4 medium raw potatoes, grated
1 c. cooked, mashed potatoes
1 egg
1 egg yolk
1 tsp. salt
1/2 tsp. pepper
fat or butter for frying
Preparation

Press the liquid from the grated potatoes and discard. Combine grated potatoes with the mashed potatoes, egg yolk, salt and pepper. Shape into desired size pancakes and fry until brown and crisp on both sides.
The pancakes are often served with sauerbraten or other substantial meat dishes or as a luncheon dish together with applesauce.
