Rice-Con-Queso - cooking recipe
Ingredients

2 c. cooked rice
1/2 onion, chopped
2 cans chopped green chilies (4 oz.)
1/2 red sweet pepper, diced
1 1/2 c. plain yogurt
1 tsp. cumin (optional)
1/2 tsp. oregano
1 c. Cheddar cheese, grated
Preparation

Spray a 1 1/2-quart casserole with cooking spray.
Combine all ingredients and pour into casserole.
Bake, uncovered, for 30 minutes at 350\u00b0.
