Baked Chicken Reuben - cooking recipe

Ingredients
    4 whole boneless, skinless chicken breasts, halved
    1/4 tsp. salt
    1/8 tsp. pepper
    2 c. sauerkraut, rinsed and drained
    4 slices low-fat Swiss cheese
    1 1/4 c. low-calorie Russian dressing
    1 Tbsp. parsley, chopped
Preparation
    Place chicken in a nonstick baking pan.
    Sprinkle with salt and pepper.
    Cover chicken with sauerkraut.
    Pour dressing evenly over all and top with Swiss cheese.
    Cover with foil and bake at 325\u00b0 for about 1 hour or until fork can be inserted in chicken easily.
    Sprinkle with chopped parsley to serve.
    Makes 4 servings.
