Chicken Bologna - cooking recipe

Ingredients
    25 lb. fresh chicken
    1/2 lb. Tender Quick
    1 oz. black pepper
    1/2 c. sugar
    2 tsp. saltpetre
    3 Tbsp. liquid smoke
    2 tsp. garlic
Preparation
    Wipe off bologna and
    leave
    skins
    on.
    Cut
    into 4 or 5-inch lengths.
    Pack in jars lengthwise and add 1/2 cup water to each quart.
    Cook 1 hour in hot water bath or 30 minutes at 10 pound pressure.
