Cream Of Cheese Soup - cooking recipe

Ingredients
    1/2 c. grated carrots
    1/2 c. finely chopped celery
    1 c. water
    2 Tbsp. chopped onion
    1/4 c. low-fat margarine
    6 Tbsp. flour
    2 c. skim milk
    2 c. low-fat chicken broth
    1/2 lb. low-fat cheese, diced
Preparation
    Cook carrots and celery in boiling water until tender.
    Cook onion in margarine until tender, but not brown.
    Stir in flour. Add milk and chicken broth.
    Cook over low heat until thickened, stirring occasionally.
    Makes 6 cups.
