Eggplant Oysters - cooking recipe

Ingredients
    1 medium eggplant
    10 whole crackers, crumbled
    1 large egg
    1/2 tsp. pepper
    1/4 c. Bisquick mix
Preparation
    Peel eggplant and cover with water; boil until tender.
    Drain and cool.
    Add egg and pepper and mix well.
    Add Bisquick mix. Drop mixture into deep hot fat (oil) until brown.
