Mulligatawny Soup - cooking recipe
Ingredients

1/4 c. butter
1/2 c. onion, diced
1 carrot, diced
2 celery stalks, diced
1 1/2 Tbsp. flour
2 tsp. curry powder
4 c. chicken broth
1/4 c. diced apple
1/2 c. boiled rice
1/2 c. cooked chicken
1/3 tsp. thyme
salt and pepper
1/2 c. hot cream
Preparation

Saute onion, carrot and celery in butter.
Stir in flour and curry.
Cook for 3 minutes.
Pour in broth and simmer for 30 minutes.
Add apple, rice, chicken, thyme, salt and pepper to taste.
Simmer for 15 minutes.
Immediately before serving, add cream.
