Cream-Filled Oatmeal Cookies - cooking recipe
Ingredients

2 c. shortening
2 c. packed brown sugar
2 c. sugar
1 tsp. vanilla extract
4 eggs
2 c. sifted flour
6 c. quick cooking oats
1 1/2 c. coconut
2 tsp. salt
2 tsp. soda
Filling
Preparation

Cream shortening, brown sugar and sugar in bowl until light and fluffy.
Stir in vanilla.
Beat in eggs 1 at a time, beating well after each addition.
Stir in mixture of sifted flour, oats, coconut, salt and soda.
Roll into balls.
Place on greased cookie sheet.
Bake at 350\u00b0 for 8 to 10 minutes or until lightly browned. Cool on cookie sheet for 2 minutes.
Remove to wire rack to cool completely.
Spread filling between cookies.
