Catfish Gumbo - cooking recipe
Ingredients

1 lb. catfish fillets, cubed
1/2 c. chopped celery
1/2 c. chopped green pepper
1/2 c. chopped onion
2 medium garlic cloves, finely chopped
2 Tbsp. vegetable oil
2 c. chicken broth
1 (14 1/2 oz.) can whole tomatoes, undrained
1 (10 oz.) pkg. frozen sliced okra
1/4 tsp. crushed red pepper
1 tsp. gumbo file
salt and pepper to taste
1 1/2 c. hot rice
Preparation

Cook celery, green pepper, onion and garlic in vegetable oil in Dutch oven until tender.
Add broth, tomatoes, okra, crushed red pepper, gumbo file, salt and pepper.
Cover and simmer 20 minutes. Place fish on vegetables.
Cover and simmer 15 minutes longer or until fish flakes easily when tested.
Serve with hot cooked rice. Makes 6 servings.
