Ingredients

1/2 c. sugar
3 Tbsp. water
1 scant tsp. salt
1/2 tsp. cayenne pepper
2 c. pecan halves
Preparation

Preheat oven to 350\u00b0.
Butter heavy large baking sheet. Combine first 4 ingredients in heavy small saucepan.
Stir over medium heat until sugar dissolves.
Boil 2 minutes.
Add pecans and stir until pecans are coated with mixture (about 1 minute). Transfer pecans to prepared sheet, spreading evenly.
Bake until light brown (13 minutes).
Transfer to cookie sheet (lined with wax paper) and separate pecans with fork.
Cool completely.
Great added to salad with romaine, Blue chunks and vinaigrette dressing.
