Lemon Butter Or Curd - cooking recipe

Ingredients
    3 eggs, beaten
    3 lemons, juice only
    2 rinds of lemon, finely grated
    6 oz. butter
    2 c. sugar
Preparation
    Mix all together in a heavy saucepan and cook over low heat until thickened.
    Can in small jelly jars or use the whole amount. Cool and refrigerate.
    Spread on fruit breads, bagels or as a jam.
