Ingredients

3 eggs
1 c. sugar
2 c. milk
1 1/2 tsp. cornstarch
1 tsp. vanilla
1/2 tsp. lemon flavoring
1/2 tsp. almond flavoring
1 to 1 1/2 c. cooked rice
1 c. raisins (optional)

Preparation

Preheat oven to 325\u00b0.
Beat eggs; add sugar and beat well. Add milk, cornstarch and flavorings.
Mix well.
Stir in rice, raisins and nutmeg to taste.
Pour in 2-quart baking dish. Sprinkle with additional nutmeg.
Set in pan of hot water.
Bake for 2 hours, until knife inserted comes out clean.
Stir several times while baking to prevent raisins and rice from settling to bottom.
