Protein-Plus Muffins - cooking recipe
Ingredients

1 1/4 c. soy flour
2/3 c. nonfat dry milk
2 Tbsp. baking soda
1/2 tsp. salt
1/2 c. chopped pitted dates
1/4 c. chopped walnuts
2 slightly beaten eggs
1 tsp. orange peel, grated
3/4 c. orange juice
2 Tbsp. honey
2 Tbsp. cooking oil
Preparation

Preheat oven to
350\u00b0.\tIn
mixing
bowl,
stir the soy flour, nonfat dry milk powder, baking powder and salt together thoroughly.
Stir
in
the\tchopped dates and chopped walnuts. Combine
the eggs, grated orange peel, orange juice, honey and cooking
oil.
Stir
the
egg mixture into the dry ingredients just
until
moistened.
Fill
greased
muffin
cups 2/3 full. Bake at 350\u00b0 until done, about 30 minutes.\tMakes 12 muffins.
