Ingredients

1 Tbsp. olive oil
1 medium onion, finely chopped
1 clove garlic, finely chopped
1 1/3 c. fresh tomatoes, coarsely chopped
2 Tbsp. tomato paste
1 tsp. oregano
1/2 tsp. each: basil, salt and sugar
1/2 bay leaf
Preparation

Saute onion in olive oil until transparent.
Add garlic and saute for 1 minute.
Stir in remaining ingredients.
Simmer at a very low heat, uncovered, for about 1 hour, stirring occasionally. Remove bay leaf.
Makes about 1 cup.
