Goose Or Duck And Sweet Dressing - cooking recipe

Ingredients
    3 lb. dressed duck
    1 1/2 c. apples, diced
    1/3 c. warm water
    salt to taste
    1 c. prunes, soaked but not cooked
    3 Tbsp. butter or fat
    3/4 c. tart pie cherries
    3 c. bread cubes
    juice of 1 orange
Preparation
    Melt fat and saute apples until tender; add all other ingredients and cover.
    Steam about 8 to 10 minutes.
    If cherries are very tart add 1 tablespoon sugar.
    Stuff bird and truss.
    Bake with breast up until brown, then turn over.
    Do not prick skin.
    I make a double recipe and tie what is leftover in a cloth and put in the pan with the duck.
