Jan Sherrill'S Shrimp Salad - cooking recipe

Ingredients
    3 lb. large shrimp, peeled and deveined
    3 cucumbers, peeled and sliced
    1 can pitted black olives
    1 bunch parsley, chopped
    3 scallions, sliced
    1/3 c. lemon juice
    1 c. extra-virgin olive oil
    2 Tbsp. cumin
    salt and pepper to taste
Preparation
    Salt cucumbers; place in bowl for 2 hours.
    Wring out moisture.
    Mix other ingredients together in large bowl.
    When cucumbers are ready, add to mixture.
    Let it sit for an hour; adjust seasoning.
    Serve on bed of lettuce.
    Serves 6 to 8.
