Fried Sweet Potato Strips - cooking recipe

Ingredients
    1 large sweet potato, peeled and grated into long strips
    1 c. vegetable oil
Preparation
    Fry potato in hot oil in a small skillet until lightly browned (watch carefully, they brown quickly).
    Remove with a slotted spoon and drain on paper towels.
    (Strips will be crisp when cooled.)
    Yield:
    about 1 cup.
